Ingredients:
For the Dough:

1 cup (240g) active sourdough starter (fed and bubbly)

1 1/4 cups (300ml) warm water

3 1/2 cups (420g) bread flour

1 tablespoon sugar

1 1/2 teaspoons salt
For Boiling:

4 cups water
-
2 tablespoons honey or brown sugar
For Topping:

Everything bagel seasoning (store-bought or homemade)
Instructions:
Step 1: Mix the Dough

In a large bowl, combine the active sourdough starter, warm water, and sugar. Mix until dissolved.

Gradually add the bread flour and salt, stirring until a shaggy dough forms.

Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook.
Step 2: Bulk Fermentation

Place the dough in a lightly oiled bowl and cover it with a damp cloth or plastic wrap.

Let it rise at room temperature for 4-6 hours or until it has doubled in size. For a deeper flavor, you can refrigerate the dough overnight.
Step 3: Shape the Bagels

Divide the dough into 8 equal portions. Roll each portion into a ball.

Using your thumb, poke a hole in the center of each ball and gently stretch it to form a bagel shape.

Place the shaped bagels on a parchment-lined baking sheet and cover with a cloth. Let them rest for 30-60 minutes.
Step 4: Boil the Bagels
