Sourdough Everything Bagels

Warm, chewy, and full of flavor, these homemade sourdough everything bagels are perfect for breakfast or a snack. Made with a tangy sourdough starter and coated in a savory everything bagel seasoning, they’re sure to impress your family and friends. Let’s dive into the recipe!


Ingredients:

For the Dough:

  • 1 cup (240g) active sourdough starter (fed and bubbly)

  • 1 1/4 cups (300ml) warm water

  • 3 1/2 cups (420g) bread flour

  • 1 tablespoon sugar

  • 1 1/2 teaspoons salt

For Boiling:

  • 4 cups water

  • 2 tablespoons honey or brown sugar

For Topping:

  • Everything bagel seasoning (store-bought or homemade)


Instructions:

Step 1: Mix the Dough

  1. In a large bowl, combine the active sourdough starter, warm water, and sugar. Mix until dissolved.

  2. Gradually add the bread flour and salt, stirring until a shaggy dough forms.

  3. Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook.

Step 2: Bulk Fermentation

  1. Place the dough in a lightly oiled bowl and cover it with a damp cloth or plastic wrap.

  2. Let it rise at room temperature for 4-6 hours or until it has doubled in size. For a deeper flavor, you can refrigerate the dough overnight.

Step 3: Shape the Bagels

  1. Divide the dough into 8 equal portions. Roll each portion into a ball.

  2. Using your thumb, poke a hole in the center of each ball and gently stretch it to form a bagel shape.

  3. Place the shaped bagels on a parchment-lined baking sheet and cover with a cloth. Let them rest for 30-60 minutes.

Step 4: Boil the Bagels

  1. Preheat your oven to 425°F (220°C).

  2. In a large pot, bring the water and honey (or brown sugar) to a gentle boil.

  3. Boil the bagels, 2-3 at a time, for 1 minute on each side. Remove with a slotted spoon and place them back on the parchment-lined baking sheet.

Step 5: Add the Toppings

  1. While the bagels are still damp, sprinkle everything bagel seasoning generously over the top.

Step 6: Bake the Bagels

  1. Bake in the preheated oven for 20-25 minutes, or until golden brown.

  2. Allow the bagels to cool on a wire rack before slicing.


Homemade Everything Bagel Seasoning:

Mix the following ingredients for a homemade blend:

  • 2 tablespoons sesame seeds

  • 2 tablespoons poppy seeds

  • 1 tablespoon dried minced garlic

  • 1 tablespoon dried minced onion

  • 1 teaspoon coarse salt

  • Overnight Fermentation: For a tangier flavor, refrigerate the dough overnight during the bulk fermentation step.
